Wild Rice Tabouli

3 c Water
1 c Wild Rice
1 medium Cucumber
1/2 block Feta Cheese
1 c Parsley
1/4 c fresh Mint
Lemon juice (optional)
Olive oil (optional)
Bring water to boil, add wild rice, let simmer 30 minutes. Allow rice to cool after cooking, chill in refrigerator for 1 hour. While the rice is cooling, cut tomatoes and cucumber into bite size pieces, either crumble or cut feta cheese into small bits, chop herbs finely, season with salt to taste. Lemon juice or a dash of oil could be added for a dressing but I find the ingredients complement each other really well by themselves.
