Thai Tuna Burgers

Ever’man Natural Foods, Pensacola, FL

24 oz Tuna, packed in water

3 T Carrots, shredded

3 T Cilantro, chopped

3 T Green Onion, chopped

½ c Peanuts, chopped

1 c Bread Crumbs

½ t Red Pepper Flakes

½ t each Salt and Pepper

1 c Mayonnaise

1 T Vegetable Oil

Drain the tuna and place in a large mixing bowl.  Mix tuna with carrots, cilantro, onion, peanuts, breadcrumbs, red pepper flakes, and salt and pepper.  Combine this mixture with the mayonnaise and mix well.  Form 6 equal burgers approximately 1 inch thick and set aside.  Bring a large skillet to medium heat, and add vegetable oil.  Cook the burgers in the skillet for 4 to 6 minutes on each side, until lightly brown on both sides.  Be sure the burgers reach an internal temperature of 165 degrees Fahrenheit.  Serve with your favorite bun or roll.
