Thai Steak Salad with mint Dressing

Whole Foods Co-op Recipe

1 head Romaine Lettuce

2 Carrots, shredded

1 Red Bell Pepper, cut in strips

½ lb Snap Peas, blanched

1 lb Boneless Steak

½ Lime, juiced

1/3 c Mint, shredded

1 Jalapeno, seeded and diced

2 T Soy Sauce

1 clove Garlic

1 T Fish Sauce

4 T Sugar

Coarse Sea Salt and Pepper

Whisk together lime juice, mint, jalapeno, soy sauce, fish sauce, sugar, and garlic until sugar is dissolved.  Let stand during the rest of preparation.  Season the steak on both sides with salt and pepper, and pan fry in a heavy iron skillet with or without oil on medium high heat for 5 to 6 minutes a side.  Let rest for 5 minutes, then slice as thinly as possible.  Add juice to the standing sauce.  Boil 1 quart of salted water, and submerge the snap peas for 30 seconds only.  Drain and run them under cold water.  Remove romaine leaves from head, wash and retain the upper 2/3 of the leaves.  Divide ingredients across 4 plates; serve with sauce on the side.
