Smoked Turkey Pasta Salad
St. Peter Food Co-op, St. Peter, MN
½ lb Penne Pasta, uncooked
¼ lb deli sliced Smoked Turkey, chopped
10 Green Beans, cut and steamed
¼ c Red Bell Pepper, diced
¼ c Yellow Pepper, diced
¼ c Red Onion, diced
½ c Parmesan Cheese, grated
1 c Caesar dressing
1 T Parsley, minced
2 T Pine Nuts
Cook pasta in salted boiling water until al dente. Rinse, drain and let cool.
In a large bowl, mix the smoked turkey, green beans, red and yellow pepper, and red onions together with cooled pasta. Add the parmesan cheese and Caesar dressing and toss gently. Garnish with parsley and pine nuts.
