Classic Broccoli Cheddar Soup

2 stalks Broccoli
1 Onion, diced
2 Carrots, julienned
3 stalks Celery, diced
1 T Olive Oil
1 T Butter
6 c Vegetable Broth
1 c Sharp Cheddar Cheese, grated
1 c Whipping Cream
2 T Flour
Salt and Pepper to taste
Sauté the onion, carrots, and celery in butter and olive oil. Add the flour and stir until coated. Slowly add the vegetable and broccoli until at the thickness you desire. Let soup cook until broccoli florets and stems are tender. Slowly add the cream, then the cheese, constantly stirring. Add salt and pepper to taste.
