Hot German Potato Salad

Anni Friesen, WFC Owner

3 Red Potatoes

4 slices Bacon (optional)

1 T Flour

1 T Brown Sugar

Water

1/4 c White Vinegar

1/2 Yellow Onion, chopped

1 t Celery Seed

Slice potatoes into bite-sized slices and boil until tender.  Remove from heat and drain.  Reserve 1 cup of the potato water.  Return the potatoes to the pot and cover.  The will soften the potatoes a bit more, but not so much that they fall apart.  Fry bacon in pan until crisp if adding bacon.  Remove bacon and save the grease.  Add onion to the hot grease or sauté in oil until translucent.  Combine flour, sugar, and celery seed in a bowl.  Then add onion.  Whisk the mixture over a medium heat until it bubbles.  Remove from heat and add vinegar and salt.  Return to heat and slowly add the reserved potato water.  You will most likely not need the whole cup.  Get the mixture to the constancy of heavy gravy and add the potatoes and bacon if desired.   Serve warm.
